The Settlement Cookbook

The Settlement Cookbook was first compiled in 1901 by Elizabeth Kander to serve the immigrants settling in Milwaukee, Wisconsin. Kander, a leader in the Jewish community, created the book to teach cooking and housekeeping skills to young women arriving from Europe, aiming to facilitate their assimilation into American life while providing practical, reliable household guidance. The proceeds from early editions were dedicated to supporting the settlement house movement, specifically the Milwaukee Jewish Mission, which provided social services to the local population.

The book is widely regarded as a significant cultural artifact of the early 20th century, bridging traditional Eastern European culinary practices with the resources of the American Midwest. Designed for accessibility and functionality, its recipes were tested for practicality, which led to its longevity as a staple in American kitchens for decades. While subsequent editions were updated by various editors to reflect changing tastes and modern kitchen technology, the original spirit of Kander’s work remained the foundation for its enduring success and historical recognition.
